Cut two peeled sweet onions crosswise into quarter-inch slices. Separate the rings and toss them with the egg white to coat. Take the coated rings and roll in a mixture of two cups of cornflake crumbs and a teaspoon of chili powder. Then place them on a baking sheet coated with non-stick spray. Bake at 375 degrees for 15 minutes or until golden brown. A serving of these onion rings has only 94 calories -- and only 2 percent of them come from fat. Potato Skins with Melted Cheese: Poke a few baking potatoes with a fork and bake them at 425 degreens Fahrenheit for 45 minutes or until they are tender. Cut the potatoes lengthwise into quarters and scoop out about three-fourths if the pulp. Place the skins on a baking sheet coated in non-stick cooking spray and cook again at 425 degrees for 15 minutes or until they are crisp. Sprinkle reduced-fat cheddar on the skins and cook for another two minutes to melt the cheese. Each skin has only 42 calories and one gram of fat. |
